ISO 4217 delineates current currency designators and some more information around currencies. A currency symbol can optional be used based on the used character set within EVSE firmware. For a quick overview see Wikipedia’s explanation at https://en.wikipedia.org/wiki/ISO_4217. My recommendation is to use the ISO 4217 three character definitions. Whenever/however currencies are formally introduced into OCPP (as part of tariffing and pricing or otherwise), they should always be identified by the internationally standardized three letter upper-case currency codes (“USD”, “CAD”, “EUR” ,“GBP”, etc.). Without tariffing & pricing and don't see a use case for things like: $/kWh. or even $ etc. So I would propose that the Tariffing & Pricing proposal will have to add units that are fitting/needed. Complexity with adding things like: dollar, euro... then we will need to add them all. Which ofcourse can be done... I dont know the correct IETF/ISO/IEC standard, have to google it, but we should reference that specification in OCPP 2.0 IF we need a currency unit..
